Strawberry Sponge Kisses
Baby cakes that are light and strawberry filled.

Ingredients

  • 4 eggs
  • 1 cup sugar
  • 2/3 cup plain flour
  • 1/3 cup cornflour
  • 2 teaspoons baking powder
  • 600g strawberry yoghurt
  • icing sugar, for dusting

Method

Beat eggs and sugar with an electric mixer for 10 minutes until thick and creamy. Sift flour, cornflour and baking powder onto the surface and fold in gently. Drop teaspoons of mixture onto baking paper lined oven trays, allowing room for spreading, and bake at 200°C for 7-8 minutes until golden brown. Remove onto a wire rack to cool. Sandwich together with yoghurt and refrigerate for at least one hour until sponges soften. Serve dusted with icing sugar.
