Apple, Blueberry and Thyme Cobbler

This is the ultimate comfort food dessert and the touch of thyme adds that extra special something.

Prep Time: 15 minutes

Cooking Time: 30 minutes

Ingredients

  • 800g can pie apple
  • 125g fresh or frozen blueberries
  • 2 tablespoons lemon thyme or thyme leaves
  • 1 tablespoon lemon juice
  • 2 tablespoons brown sugar
  • 1 cup plain flour
  • 3/4 cup caster sugar
  • 1 teaspoon baking powder
  • 125g butter, cubed

Method

  • Combine pie apple, blueberries, lemon juice, brown sugar and thyme leaves together into a pie dish.
  • Combine flour, sugar and baking powder together and mix in butter, squeezing with your hand to make a stiff dough.
  • Crumble dough onto the top of fruit and bake at 200°C for 30 minutes until golden brown. Serve with vanilla ice cream.

Tips

  • Use frozen raspberries, blackberries or cherries in place of blueberries.
  • STYLING Garnish with an extra sprig of thyme.
  • DRINK Late harvest Riesling
