Apple, Blueberry and Thyme Cobbler

This is the ultimate comfort food dessert and the touch of thyme adds that extra special something.
Serves:

Prep Time: 15 minutes
Cooking Time: 30 minutes
Ingredients
- 800g can pie apple
- 125g fresh or frozen blueberries
- 2 tablespoons lemon thyme or thyme leaves
- 1 tablespoon lemon juice
- 2 tablespoons brown sugar
- 1 cup plain flour
- 3/4 cup caster sugar
- 1 teaspoon baking powder
- 125g butter, cubed
Method
- Combine pie apple, blueberries, lemon juice, brown sugar and thyme leaves together into a pie dish.
- Combine flour, sugar and baking powder together and mix in butter, squeezing with your hand to make a stiff dough.
- Crumble dough onto the top of fruit and bake at 200°C for 30 minutes until golden brown. Serve with vanilla ice cream.
Tips
- Use frozen raspberries, blackberries or cherries in place of blueberries.
- STYLING Garnish with an extra sprig of thyme.
