Apple Cider Pulled Pork

Succulent pulled pork slow cooked in a fruity apple cider and mustard sauce.

Cooking Time: 4 hours

Ingredients

  • 1 tablespoon smoked paprika
  • sea salt and freshly ground black pepper, to taste
  • 2 kg whole piece pork scotch fillet (pork neck)
  • 1 tablespoon olive oil
  • 2 large red onions, sliced
  • 4 cloves garlic, crushed
  • 375ml apple cider*
  • 375g apple sauce ( 1 1/3 cups)
  • 1 tablespoon American yellow mustard
  • few strips of lemon rind
  • 1 cinnamon stick

Method

Combine paprika with 1 teaspoon salt and 1/2 teaspoon pepper and use to rub all over pork. Heat oil in a heavy based ovenproof pot and brown pork on one side until golden. Turn over and add onions and garlic to the pan, sautéing as the meat browns on the second side. Add cider, apple sauce, mustard, lemon rind and cinnamon stick, stirring to combine. Cover and bake at 150°C for 4 hours, until the pork is very tender. Allow to rest while simmering the sauce on the cooktop for 5 minutes until reduced. Serve pulled apart with coleslaw and sweetcorn or roast sweet potato and succotash.

Tips

* Alcoholic cloudy apple cider was used in this recipe, but it can be substituted with non-alcoholic if preferred.
