Slow Cooked Beef Short Ribs with Sticky Prune Sauce
Slow cooked ribs with a sweet and sour sauce of plump sticky prunes.

4-6
Prep Time: 20 minutes
Cooking Time: 2 1/2 hours
Ingredients
- 1.5kg beef asado short ribs
- sea salt and pepper, to taste
- 2 tablespoons olive oil
- 1 large red onion, sliced
- 4 large cloves garlic, chopped
- 2 cups beef stock
- 1/4 cup barbecue sauce
- 1 tablespoon seeded mustard
- 1/2 cup pitted prunes
- few stalks of rosemary
- 50g softened butter
- mash, for serving
Method
- Cut short ribs into pieces between the bones and season. Heat oil in a large heavy-based ovenproof pot and such as a French oven, and brown ribs on all sides. Add onions and garlic and sauté until softened. Add stock, barbecue sauce, mustard, prunes and rosemary, and bring to the boil.
- Cover and bake at 160°C for 2 hours until meat is tender. Remove ribs and keep warm. Simmer pan juices until syrupy and season. Turn off the heat and stir in butter to make a sauce.
- Serve ribs on a bed of mash. Spoon sauce on top and garnish with fresh rosemary.
- VARIATION Also delicious with sweet potato mash instead of the mash.
Tips
- TIPS Asado beef ribs are cut across the rib for extra flavour.
- STYLING Spoon mash on the base of a flat bowl, top with three ribs, spoon sauce over and finish with rosemary sprigs and pepper.
- DRINK MATCH Cabernet sauvignon, shiraz, West Coast IPA or red ale.
