Blueberry Lemon Delicious Puds

Cozy up on a Winter's night with these delectable little lemon puddings that have a surprise burst of blueberries.
Serves:
6
Prep Time: 15 minutes
Cooking Time: 30 minutes
Ingredients
- 250g frozen blueberries
- 2 tablespoons caster sugar
- 125g unsalted butter, softened
- 1 cup caster sugar, extra
- grated rind of 1 lemon
- 4 eggs, separated
- 1/2 cup plain flour
- 1/2 cup lemon juice
- 1 1/4 cups milk
- cream, for serving
Method
Combine blueberries and 2 tablespoons sugar and divide evenly between 6 soufflé dishes (or use 1 x 8 cup pudding dish). Cream butter, extra sugar and lemon rind together until light and fluffy, gradually beat in yolks, then fold in flour, lemon juice and milk. Beat egg whites until stiff peaks form and gently fold into batter. Pour into dishes and bake at 180°C for 30 minutes until golden brown. Serve with cream.
