Bubble and Squeak Fritters

Bubble and Squeak Fritters
These tasty little fritters are a great use of leftover roast veggies from the night before for a bonza brekkie the next day!

Makes:

10-12

Prep Time: 10 minutes

Cooking Time: 10 minutes

Ingredients

  • 1 cup self-raising flour
  • 1/2 teaspoon salt
  • 2 tablespoons grated Parmesan cheese
  • 1 egg, separated
  • 2/3 cup warm water
  • 1 1/2 cup chopped cooked vegetables
  • 1/2 cup vegetable oil, for shallow frying
  • natural yogurt and sweet chilli sauce, for serving

Method

Combine flour, salt and Parmesan together in a bowl and make a well in the centre. Add egg yolk and warm water and mix to a smooth batter. Fold in vegetables. Whisk egg white until stiff peaks form and fold into batter. Heat oil in a large frypan and shallow fry spoonfuls of mixture until golden on both sides. Drain on absorbent paper. Serve dolloped with yogurt and drizzled with sweet chilli sauce.

Tips

  • Make sure the mixed vegetables contain some corn kernels or peas for flavour and texture.
  • Use egg rings to fry fritters so they maintain a good shape.
  • Add a little chopped coriander, parsley or dill to the batter for extra flavour.
