These tasty little fritters are a great use of leftover roast veggies from the night before for a bonza brekkie the next day!

Prep Time: 10 minutes
Cooking Time: 10 minutes
Ingredients
- 1 cup self-raising flour
- 1/2 teaspoon salt
- 2 tablespoons grated Parmesan cheese
- 1 egg, separated
- 2/3 cup warm water
- 1 1/2 cup chopped cooked vegetables
- 1/2 cup vegetable oil, for shallow frying
- natural yogurt and sweet chilli sauce, for serving
Method
Combine flour, salt and Parmesan together in a bowl and make a well in the centre. Add egg yolk and warm water and mix to a smooth batter. Fold in vegetables. Whisk egg white until stiff peaks form and fold into batter. Heat oil in a large frypan and shallow fry spoonfuls of mixture until golden on both sides. Drain on absorbent paper. Serve dolloped with yogurt and drizzled with sweet chilli sauce.
Tips
- Make sure the mixed vegetables contain some corn kernels or peas for flavour and texture.
- Use egg rings to fry fritters so they maintain a good shape.
- Add a little chopped coriander, parsley or dill to the batter for extra flavour.
