Chocolate Swirl Brownies with Jersey Caramels
Incredibly moreish creamy chocolate brownies with the surprise of chewy jersey caramels inside.

24 pieces
Prep Time: 15 minutes
Cooking Time: 45 minutes
Ingredients
- 250g cream cheese, softened at room temperature
- ½ cup caster sugar
- 1 teaspoon vanilla essence
- 5 eggs
- 1 cup plain flour
- 180g dark chocolate melts
- 150g butter, cubed
- ¾ cup dark brown sugar
- 100g jersey caramels, quartered
Method
- Butter and line a 20cm x 30cm slab tin or similar tin.
- Beat cream cheese, caster sugar and vanilla together with electric beaters until smooth and creamy. Gradually beat in 2 eggs and fold in ¼ cup flour.
- Melt chocolate and butter together in microwave or in a double boiler until melted and allow to cool slightly. Whisk in brown sugar and remaining eggs until smooth. Fold in remaining flour.
- Reserve a few spoonfuls of the chocolate mixture and pour the rest into prepared tin. Dot with jersey caramels. Spoon cream cheese mixture on top and dollop with reserved chocolate mixture. Use a skewer to form a swirled pattern.
- Bake at 170°C for 30-40 minutes until golden brown and set. Allow to cool before removing and cutting into small squares.
Tips
- Use chunks of chocolate or walnut pieces instead of jersey caramels.
- STYLING Use the tip of the skewer to drag the cream cheese mixture into the chocolate mixture, swirling to create a pattern.
- DRINK Cold glass of milk!
