Crispy Chicken Breast in Caper, Lemon and Garlic Butter

This is a great method to cook a chicken breast fillet so the skin is crisp but the centre remains juicy.

Cooking Time: 30 minutes
Ingredients
- 2 chicken breast fillets, skin on*
- sea salt and pepper, to taste
- 1 lemon
- 1 tablespoon olive oil
- 80g butter
- 2 large cloves garlic, crushed
- 1 tablespoon capers
- 1 tablespoon chopped continental parsley
Method
- Season chicken with salt on both sides and grate lemon rind over the skinless side of the chicken. Allow to stand 10 minutes.
- Heat oil and half the butter in a frypan and cook chicken, skin side down, over medium heat for 10 minutes until skin is crispy. Cover and continue to cook, skin side down, for a further 10 minutes, until chicken is cooked all the way through. The skin will continue to cook and crisp further, and will protect the meat from drying out.
- Remove and place onto serving plates while making the sauce.
- Add the garlic to the pan and sauté until softened. Add lemon juice and capers and deglaze the pan, stirring with a wooden spoon to dissolve the pan juices. Remove from heat and mix in remaining butter, swirling to make a sauce. Season to taste, stir in parsley and spoon over chicken.
- Serve sprinkled with pepper.
Tips
* Buy a whole chicken and remove the chicken breast fillets for this recipe, leaving the skin on, and use the rest to make chicken soup or another dish.
