Cuban Mojo Marinade

A punchy marinade with Cuban flavours that is just made for pork or chicken.

Makes:

3-4 cups

Prep Time: 20 minutes

Ingredients

  • 2 bunches oregano
  • 1 bunch coriander
  • 1 bunch mint
  • 1 bulb garlic, peeled
  • 2 green chillies, deseeded
  • 2 tablespoons ground cumin
  • 1 tablespoon salt
  • juice of 2 limes
  • 3 oranges
  • 2 cups extra virgin olive oil

Method

Wash herbs, trim the ends and dry well in a salad spinner. Combine herbs, garlic, chillies, cumin, salt, lime juice, grated rind of 2 oranges and juice of 3 into a food processor and blend until finely chopped. Blend in oil. Pour into sterilised jars, seal tightly and keep refrigerated for up to 3 weeks. Use as a marinade for pork, chicken or seafood.
