La Cucina Butter Cake – ‘Cake Of The Day’

This recipe is over 40 years old and comes from La Cucina Casalinga, the Toorak cafe my Dad had at that time. The cafe chef would freshly bake this Cake Of The Day each morning, and he would simply use different fruit to change it up. The aroma of it cooking would draw customers in to line up for their morning coffee and a huge square block of this cake straight from the oven. There was nothing better!

Makes:

1 x 25cm cake

Prep Time: 10 minutes

Cooking Time: 1 hour

Ingredients

  • 2 cups self-raising flour
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 250g butter, melted
  • 800g can fruit of choice, drained (apricots, peaches, cherries, apples etc)
  • icing sugar, for dusting
  • cream, for serving

Method

  • Butter and line a 25cm square tin.
  • Combine flour and sugar, add eggs, milk and vanilla and beat to combine using the paddle attachment on an electric mixer, not the whisk, or do it by hand using a wooden spoon. Add melted butter and beat mixture for 5 minutes until well combined.
  • Pour into prepared tin and place fruit on top. It will sink to the bottom of the cake mixture.
  • Bake at 180°C for 1 hour or until golden brown and until a skewer inserted in the centre comes out clean. During this time, if the cake is colouring too quickly, cover with foil. Allow to stand 5 minutes, before turning out onto a wire rack to cool. Dust with icing sugar and serve with cream.
  • DOUBLE QUANTITY RECIPE This ‘double’ quantity will make 2 x 25cm square or 29cm round cakes. 4 cups self-raising flour 3 cups sugar 7 eggs 1 3/4 cups milk 500g butter, melted 1.5kg canned fruit of choice, drained
  • COMMERCIAL QUANTITY The ingredients for the original recipe in commercial quantities are below. It make a large commercial cake pan but you do need an industrial size mixer to make it that large. 1.2kg self-raising flour 1.2kg sugar 14 eggs 3 1/2 cups milk 1 kg butter, melted 3kg canned fruit of choice, drained

Tips

  • Cake will keep for several days in an airtight container at room temperature.
  • STYLING Dust with icing sugar and serve cut into large square blocks – La Cucina style!
  • DRINK Pot of English Breakfast tea
