Lemon Delicious Croissant Pudding
A quick, easy and delicious winter pudding made with flaky croissants and the zing of lemon curd.
Serves:
4-6
Prep Time: 15 minutes
Cooking Time: 20 minutes
Ingredients
- 4 croissants
- 350g jar lemon curd or lemon butter
- 4 eggs
- 2 cups whole milk
- 1/2 cup cream
- 2 tablespoons caster sugar
- 1 teaspoon vanilla extract
- icing sugar, for dusting
- cream or ice cream, for serving
Method
- Cut the croissants in half horizontally. Spread with lemon curd and sandwich back together. Cut into slices and arrange in a baking dish.
- Lightly whisk together eggs, milk, cream, sugar and vanilla with a fork. Pour over croissants. Allow to stand for at least 10 minutes or up to one hour.
- Bake at 180°C for 20 minutes until custard has set.
- Dust with icing sugar and serve with cream or ice cream.
Tips
- Use chocolate hazelnut spread, biscoff spread or jam in place of lemon curd for a different flavour.
- STYLING Carefully place the pieces of sliced croissant next to each other in order int he baking dish, before pouring over the custard.
