Little Lamb and Sage Meatballs with Lemon Paprika Mayonnaise

Tasty little meatballs perfect for pass-arounds or an easy meal.

Makes:

50 meatballs

Prep Time: 10 minutes

Cooking Time: 15 minutes

Ingredients

  • 1 kg lamb mince
  • 1/4 cup finely chopped fresh sage leaves
  • 4 cloves garlic, crushed
  • 2 tablespoons smoked paprika
  • grated rind and juice of 1 large lemon
  • sea salt and freshly ground black pepper, to taste
  • 1/2 cup egg mayonnaise
  • 1 teaspoon smoked paprika, extra

Method

Combine mince, sage, garlic, paprika, grated lemon rind, 2 teaspoons salt and 1 teaspoon pepper, mixing well by hand until the mixture is sticky. Using wetted hands, roll into small meatballs and fry in an oiled non-stick pan, turning until golden brown all over and cooked through. Combine mayonnaise with 2 tablespoons lemon juice and extra paprika. Serve meatballs with Lemon Paprika Mayonnaise.

Tips

For a cute pass-around, skewer meatballs with a stuffed green olive, as pictured.
