Smoked Ham and Vegetable Soup
A deep flavoured smoky ham soup that's good for the soul!

Cooking Time: 3 hours

Ingredients

  • 2 tablespoons olive oil
  • 1 leek or 2 onions, sliced
  • 4 carrots, peeled and finely diced
  • 3 stalks celery, finely diced
  • 2 potatoes, peeled and diced
  • 400g can cannellini beans, undrained*
  • 1kg smoked ham hock
  • 2.5 litres water
  • 2 bay leaves
  • sea salt and freshly ground black pepper, to taste
  • 1 tablespoon thyme leaves

Method

Heat olive oil in a large pot and sauté leek until softened. Add carrots and celery and sauté for 5 minutes. Add potatoes, beans, ham hock, water and bay leaves. Season. Bring to the boil, reduce heat and simmer covered for 3 hours until ham hock is very tender. Remove ham hock and chop meat, discarding skin and any gristle. Return to soup with thyme leaves, season to taste and serve in bowls with crusty bread.

Tips

* 375g pkt Italian Style Soup Mix (dried beans, peas, lentils) may be substituted.
