‘If I Knew You Were Comin’, I’d’ve Baked A Cake!’ …

That’s a song from the 1950s and it actually reminds me how much love goes into it when you bake for someone.

Choosing their favourite flavour or their comfort food cake, whipping up a batch of biscuits or scones for them or, best of all, creating a celebration cake for them. It’s why the birthday cake at the party is so important. It says, ‘Look, someone loves me!’

I really do love it when I get the chance to create a special treat for a special person in my life. Most recently, my sister turned 50 and was having a Tea Party to celebrate. She asked me to bake a Chocolate Beetroot type cake to fit in with her ‘healthy with a twist’ menu, so I researched and tested and came up with these Chocolate, Beetroot and Raspberry Muffins with a Choc Buttermilk Ganache. We served them in a giant tea cup to serve both as a centrepiece and birthday cake. The beetroot goodness seemed to assuage the guilt of indulging in chocolate muffins..but let’s face it, it’s still cake!
