Gee, it’s good to be back in my own kitchen after six weeks overseas.
I realise that I am at my happiest creatively when I am developing a new recipe and translating the flavours and textures I have in my head onto the plate…usually cooking with music on in the background.
Last night, after returning from winter in Europe, I created a summer recipe for Chicken and Apple Mint Salad on a 27 degree day here in sunny Melbourne, with Spanish flamenco guitar music playing…and I served it all on my new Moroccan plate.
Talk about cross-cultural contrasts…I thought to myself, I must be back in Australia!
