Asparagus Salad with Blue Cheese Dressing

Spring asparagus with a tangy blue cheese dressing.

Serves: 4
Preparation Time: 15 minutes
Cooking time: 5 minutes
  • 75g Tasmanian Heritage Deep Blue cheese
  • 1 bunch asparagus, trimmed
  • 1/4 cup water
  • olive oil, for drizzling
  • 4 slices red onion, separated into rings
  • 1 baby cos lettuce, separated into leaves
  • 1/4 cup sour cream
  • 1 tablespoon mayonnaise
  • 2 tablespoons milk
  • 1 tablespoon white wine vinegar
  • salt and pepper, to taste
  • 1/4 cup continental parsley leaves

Place asparagus and water in a frypan and simmer for 3-5 minutes until just tender. Drain and refresh under cold water. Coat with a little olive oil. Arrange lettuce leaves, asparagus and onion rings on a serving platter. Whisk blue cheese, sour cream, mayonnaise, milk and vinegar together and season to taste. Drizzle over salad and sprinkle with parsley leaves.
