Avocado and Spinach Salad

A great way to get your greens!

Serves: 4-6
Preparation Time: 10 minutes
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon lime or lemon juice
  • 1 teaspoon honey
  • 1 teaspoon dijon mustard
  • sea salt and freshly ground black pepper, to taste
  • 1 large avocado
  • 120g baby spinach leaves
  • 1 lebanese cucumber
  • 2 spring onions
  • 2 tablespoons flaked almonds
  • 1 tablespoon sesame seeds
  • 3 teaspoons ground cumin
  • 1 teaspoon salt

Shake oil, lime juice, honey and mustard together in a jar until combined and season. Slice avocado and toss in dressing. Cut cucumber in half lengthwise, scoop out seeds and slice. Toss sliced cucumber, spinach, chopped spring onions and avocado with dressing. Serve sprinkle with 2 tablespoons Dukkah.


Combine almonds and sesame seeds in a frypan and cook, stirring for a few minutes until lightly toasted. Turn off heat, mix in cumin and salt and allow to cool. Crush in a mortar and pestle or place in a bag and batten with a rolling pin to make a crumb. Use as required.
