Avocado, Roast Tomato, Zucchini and Rocket Salad with Pesto Dressing
A fresh salad of fresh greens, creamy avocado and chargrilled zucchini with a tasty pesto dressing.

- 250g large cherry tomatoes, halved
- 1 large zucchini
- 1/4 cup pesto
- 2 tablespoons extra virgin olive oil
- juice 1/2 lemon
- 1 small red capsicum, deseeded and halved
- olive oil spray
- 120g rocket leaves
- 1 avocado, peeled, cut into chunks
- basil leaves, for garnish
Place tomatoes on an oven tray, drizzle with oil, season and roast at 150°C for 45 minutes. Cut zucchini lengthwise into long thin slices. Spray zucchini and capsicum with oil and chargrill on both sides until golden brown grill marks appear. Cut into strips. Shake pesto, oil and lemon juice together in a jar to make a dressing. Toss rocket with a little dressing and arrange on a platter. Top with zucchini, capsicum, roast tomatoes and avocado. Drizzle with dressing and serve garnished with basil leaves.
