BBQ Octopus with Feta Dressing

Tender octopus simmered in red wine and then finished on the bbq is perked up with a creamy feta and oregano dressing.

Serves: 6
Preparation Time: 10 minutes
Cooking time: 1 hour
  • 2 cups water
  • 1 onion, quartered
  • 2 cloves garlic, peeled
  • 1 teaspoon peppercorns
  • 1 kg cleaned octopus
  • 1 cup dry red wine
  • 100g feta cheese, crumbled
  • 1 tablespoon fresh oregano, finely chopped
  • 1 clove garlic, crushed
  • 1/4 cup extra virgin olive oil
  • juice 1 lemon
  • freshly ground black pepper, to taste
  • extra oregano, for garnish

Combine water, onion, garlic cloves and peppercorns in a pot and bring to the boil. Using tongs, dunk octopus in boiling water and remove. Bring back to the boil and repeat this process two times. The last time, leave octopus in the water, add wine and simmer covered for 30-35 minutes until tender. Combine feta, oregano, crushed garlic, oil and lemon juice together to make a dressing. Chargrill octopus over a hot grill until just charred and serve topped with dressing, extra oregano and a sprinkling of pepper.
