Bocconcini, Basil and Tomato Salad (Insalata Caprese)
A classic Summertime combination of ripe tomatoes with basil bocconcini.

- 180g tub bocconcini
- 1 punnet cherry tomatoes
- 1/2 bunch fresh basil
- ¼ cup extra virgin olive oil
- sea salt and freshly ground black pepper, to taste
Drain South Cape Bocconcini. Finely chop 2 tablespoons basil, combine with olive oil and season to taste. Halve cherry tomatoes and toss with Bocconcini and ½ cup basil leaves. Arrange on a serving plate and drizzle with basil oil. Season with pepper and garnish with extra basil leaves.
