Brioche Breakfast Bake
Sweet, buttery brioche and prosciutto baked in a savoury cheese custard make a great brekkie bake.

- 8 brioche buns (280g pkt) or small croissants
- 100g prosciutto or thinly sliced ham
- 2 cups grated cheddar cheese
- 12 eggs
- 1 1/2 cups milk
- 1 cup cream
- 2 spring onions, chopped
Split brioche rolls in half and fill with prosciutto. Arrange in a lasagne dish or similar. Sprinkle with half the cheese. Whisk eggs, milk and cream together until combined and pour over brioche. Sprinkle with remaining cheese and spring onions. Refrigerate for at least 1 hour or overnight. Bake at 180°C for 30-40 minutes until set and golden brown.
