|Preparation Time:||10 minutes|
|Cooking time:||10 minutes|
- 1 cup self-raising flour
- 1/2 teaspoon salt
- 2 tablespoons grated Parmesan cheese
- 1 egg, separated
- 2/3 cup warm water
- 1 1/2 cup chopped cooked vegetables
- 1/2 cup vegetable oil, for shallow frying
- natural yogurt and sweet chilli sauce, for serving
Combine flour, salt and Parmesan together in a bowl and make a well in the centre. Add egg yolk and warm water and mix to a smooth batter. Fold in vegetables. Whisk egg white until stiff peaks form and fold into batter. Heat oil in a large frypan and shallow fry spoonfuls of mixture until golden on both sides. Drain on absorbent paper. Serve dolloped with yogurt and drizzled with sweet chilli sauce.
Make sure the mixed vegetables contain some corn kernels or peas for flavour and texture.
Use egg rings to fry fritters so they maintain a good shape.
Add a little chopped coriander, parsley or dill to the batter for extra flavour.
