Butter Lettuce and Watercress Salad with French Vinaigrette

Tender butter lettuce with peppery watercress is set off by a classic French dressing.

Serves: 4-6
Preparation Time: 10 minutes
  • 1 butter lettuce
  • 100g watercress, washed
  • 1 tablespoon lemon juice or white wine vinegar
  • 1/4 cup grapeseed oil or extra light olive oil
  • 1 teaspoon Dijon mustard
  • sea salt and freshly ground black pepper, to taste

Separate the leaves from the butter lettuce and wash well. Spin lettuce and watercress in a salad spinner until dry. Shake Vinaigrette ingredients together in a screwtop jar. Gently toss salad leaves and vinaigrette together just before serving.
