Butter Poached Asparagus with Dill and Black Sea Salt
This is the best way to cook asparagus as a side dish so it is tender and buttery.

- 2 bunches young asparagus
- 50g butter
- 1/4 cup water
- 1 tablespoon fresh dill leaves
- black sea salt flakes, for sprinkling
Using a vegetable peeler, shave the woody stems of the asparagus and trim the ends. Place in a large frypan with butter and water and cook, shaking the pan occasionally and adding extra water if needed, until the asparagus is just tender but still bright green. Serve immediately sprinkled with dill and black sea salt.
