Charred Corn, Capsicum and Cauliflower Salad

Cauliflower, corn and capsicum make a colourful salad.

Serves: 4-6
Preparation Time: 15 minutes
Cooking time: 15 minutes
  • 2 corn on the cob
  • 1 red capsicum
  • 1/2 cauliflower, cut into florets
  • 2 tablespoons lemon juice
  • 2 cloves garlic, crushed
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 cup dill leaves
  • 1 tablespoon toasted pine nuts

Chargrill corn and capsicum until charred on all sides. Wrap capsicum in foil to cool, remove skin and seeds, and cut into strips. Cut the corn kernels off the cob. Steam the cauliflower for 10-15 minutes until tender, drain and refresh under cold water. Shake lemon juice, garlic, oil and salt in a jar to make a dressing. Arrange the cauliflower, capsicum and corn on a serving dish, drizzle with dressing and serve sprinkled with dill and pine nuts.
