Cheese and Bacon Ciabatta Bake
This is a savoury bread and butter pudding that makes a light meal, breakfast or side dish.

Ingredients
- 4 rashers streaky bacon, cut into strips
- 1 onion, finely diced
- 1/2 loaf (250g) stale ciabatta or crusty bread, cut into cubes
- 150g grated smoked cheddar cheese
- 6 eggs
- 3/4 cup regular milk
- 3/4 cup cream
- 1 teaspoon salt
Method
Cook bacon in a frypan on medium heat until fat renders, then add onion and fry over high heat until golden. Butter a rectangular lasagne dish and add ciabatta bread cubes, bacon, onion and half the cheese, tossing together. Lightly beat eggs, milk, cream and salt together with a fork and pour over bread mixture. Sprinkle with remaining cheese and bake at 180°C for 25-30 minutes until golden brown. Serve warm.
