Cheesy Pumpkin Fritters with Chive Mascarpone

Sunny coloured pumpkin fritters , topped with mascarpone, to pass around or enjoy for lunch.

Serves: 20-24
Preparation Time: 10 minutes
Cooking time: 5 minutes
  • 60g Gouda, Edam or Swiss-style cheese
  • 100g pumpkin or sweet potato
  • 1 egg
  • 11/2 tablespoons self-raising flour
  • 1/4 teaspoon salt
  • freshly ground black pepper, to taste
  • 1 tablespoon snipped chives
  • olive oil, for frying

  • 250g tub South Cape Mascarpone
  • grated rind and juice of 1 lemon
  • extra chives, for garnish

Grate cheese and pumpkin and combine with egg, self-raising flour, salt, pepper and half the chives together. Cook spoonfuls of mixture in a hot oiled pan or on the bbq for 1-2 minutes on each side until golden. Drain on absorbent paper. Meanwhile, combine mascarpone with lemon rind and juice and remaining chives. Serve fritters dolloped with Chive Mascarpone garnished with extra chives.
