Choc Cherry Cupcakes – Eggfree

Dark, chocolatey little cupcakes with tart sour cherries and they are eggfree too!

Cooking time: 20 minutes
  • 1 1/2 cups plain flour
  • 1/2 cup dark cocoa powder
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 1 cup milk (or soy or almond milk for dairy free)
  • 2 teaspoons white vinegar
  • 1 cup A1 sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup extra light olive oil or 125g unsalted butter, melted
  • 500g drained morello sour cherries
  • icing sugar, for dusting

Line 24 patty tins with paper patty cases. Sift flour, cocoa, bicarbonate of soda and salt together. Combine milk and vinegar together in the bowl of a stand mixer. Add sugar and vanilla beat until sugar has dissolved. Mix in oil. Sift dry ingredients again over the surface of the milk mixture and gently fold in. Spoon mixture into patty cases and place one sour cherry in the centre of each cupcake. Bake at 180°C for 15-20 minutes until cooked when tested (a skewer inserted in the centre should come out clean). Turn out and allow to cool on a wire rack. Decorate with extra cherries and dust with icing sugar.
