Chocolate Banana Cake

This is really the best use for those over-ripe bananas. Blend them into the mix of chocky cake!

Serves: 12
Preparation Time: 15 minutes
Cooking time: 45 minutes
  • 125g butter, melted
  • 2 ¼ cups self raising flour
  • 2/3 cup cocoa powder
  • 1 cup caster sugar
  • 1 teaspoon ground cinnamon
  • 1 cup milk
  • ¼ cup sour cream
  • 2 eggs
  • 2 large ripe bananas, well mashed
  • 125g dark chocolate, chopped
  • 2 tablespoons pure cream

Use a little butter to grease an 8 cup capacity ring tin. Sift flour, cocoa, sugar and cinnamon into a bowl. Make a well in the centre and add milk, sour cream, eggs and melted butter. Use a whisk to blend the wet ingredients in the well together and then a wooden spoon to completely combine with the flour. Mix in mashed banana. Spoon into the tin and bake at 180°C for 40-45 minutes or until cooked when tested (the cake should be springy to touch and a wooden skewer inserted into the centre of the cake should come out clean). Allow cake to stand in the tin for 5 minutes before turning out onto a wire rack to cool. Ice with Chocolate Ganache.

Chocolate Ganache
Gently heat chocolate and cream together in a saucepan, stirring continually, until just melted. Allow to come to room temperature before pouring over cooled cake.
