A marriage made in heaven – silky chocolate mousse over coffee soaked sponge fingers, dolloped with cream, Tiramisu-style.

- 250g dark cooking chocolate, chopped
- 600ml thick custard
- 2 cups hot espresso coffee
- 2 tablespoons brown sugar
- 1/2 cup marsala or coffee liqueur
- 200g sponge finger biscuits, broken into pieces
- 600ml cream
- cocoa, for dusting
Combine chocolate and custard in a large glass bowl and microwave on High for 2 minutes at a time, stirring in between, until chocolate has just melted. Refrigerate to cool. Combine coffee and sugar in a large bowl, until dissolved, then add marsala. Mix in sponge finger pieces until coated and divide evenly between 10 serving glasses. Whip cream until soft peaks form. Fold half the cream into the chocolate custard mixture and spoon into glasses. Refrigerate for 2 hours until set, then dollop with remaining cream and sprinkle with cocoa to serve.
This recipe comes with a warning! It is super-delicious but also super-rich. Portions can be made smaller, to serve 12, if preferred.
