Cranberry Banana Bread
Delicious banana bread warm from the oven or toasted the next day!

- olive oil spray
- 2 large ripe bananas, peeled
- 2 eggs
- 1/3 cup extra light olive oil
- 1 cup dark brown sugar
- 2/3 cup dried cranberries
- 1 ½ cups self-raising flour
- 2 teaspoons mixed spice
Spray a loaf pan with oil and line with baking paper. Mash bananas in a large bowl and mix in eggs and oil. Stir in brown sugar and cranberries. Fold in flour and mixed spice. Pour into loaf pan and bake at 180°C for 30-40 minutes until golden brown and cooked when tested. Turn out onto a wire rack to cool and serve warm cut into slices or serve toasted with butter.
•Substitute dried cranberries with dried cherries, dried apricots, frozen blueberries or choc chips.
•Substitute bananas with 1 cup pie apple.
