Creamy Chicken, Spinach and Peas

This creamy one pot chicken dish is a perfect midweek meal and the addition of dill gives it a lovely freshness.

Serves: 4
Preparation Time: 15 minutes
Cooking time: 20 minutes
  • 2 tablespoons olive oil
  • 1 leek, sliced
  • 750g chicken thigh fillets, cut into 2cm pieces
  • 1/2 cup dry vermouth or dry white wine
  • 1 cup cream
  • 1 tablespoon Dijon mustard
  • sea salt and freshly ground black pepper, to taste
  • 1 cup frozen peas
  • 120g baby spinach, washed
  • 2 tablespoons fresh dill sprigs
  • crusty baguette, for serving

Heat oil in a large pot and sauté leek over low to medium heat until softened. Turn up heat, add chicken, season and sauté until browned on all sides. Add vermouth and simmer for 1 minute. Add cream and simmer a further 10 minutes until reduced and slightly thickened. Stir in peas and spinach, stirring until spinach has just wilted. Season to taste, sprinkle with dill and serve with crusty baguette.
