Dijon Chicken with Bacon and Mushrooms
This is a very easy one pot chicken dish with a piquant mustard sauce.

Ingredients
- 8 chicken thighs (chicken chops)
- sea salt and freshly ground black pepper, to taste
- 1 tablespoon olive oil
- 4 rashers bacon, finely sliced
- 1 small leek, finely sliced
- 8 whole medium size mushrooms
- 4 cloves garlic, smashed
- 1 cup dry white wine or chicken stock
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1-2 tablespoons cornflour, to thicken
- crusty bread and salad or oven-baked potatoes, for serving
Method
Season chicken with salt and pepper. Heat oil in a large ovenproof casserole dish and brown chicken skin side down and remove. Add bacon and leek and sauté until golden. Add mushrooms and garlic and sauté for 1 minute. Add wine, mustard and honey, stirring to combine. Add chicken and bake uncovered at 200°C for 1 hour. Mix cornflour to a paste with a little water. To thicken juices, simmer pan on stovetop, stirring in cornflour paste until thickened to desired consistency. Season to taste and serve with crusty bread and salad or oven-baked potatoes .
