Dragon Wings with Spicy Mayo and Chilli Jam
Crispy whole chicken wings get the dragon treatment with a fiery chilli jam and a spicy mayo.

Ingredients
- 2 kg whole chicken wings
- 2 tablespoons olive oil
- 1 x 35g pkt french onion soup mix
- 1 tablespoon smoked paprika
- 1 teaspoon chilli flakes, optional
- SPICY MAYO
- 1 cup Japanese mayonnaise
- 3 teaspoons sriracha chilli sauce
- 1 tablespoon milk
- CHILLI JAM (Makes 1 1/2 cups)
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 1 clove garlic, crushed
- 1 red capsicum, finely chopped
- 2 teaspoons dried chilli flakes
- 400g can diced tomatoes
- 3/4 cup brown sugar
- 1/2 cup white vinegar
- 1 1/2 teaspoons salt
Method
CHICKEN WINGS
Place chicken wings on a large oven tray and coat evenly with oil, soup mix, paprika and chilli flakes. Roast at 200°C for 45 minutes, turning halfway, until golden. Sprinkle with extra paprika and serve with Spicy Mayo and Chilli Jam.
SPICY MAYO
Combine all ingredients together and use as required.
CHILLI JAM
Makes 1 1/2 cups
Heat oil and fry onion, garlic and capsicum until softened. Add remaining ingredients and simmer for 20 minutes until thick. Store in a sealed jar in the refrigerator for up to 3 months.
Tips
The Chilli Jam in this recipe makes a large quantity that can be stored for later use.
