Duck Fat Kipfler Potatoes
Lovely nutty little kipflers are extra delicious when roasted in duck fat!

- 1 kg baby kipfler potatoes, scrubbed
- 1/2 cup duck fat, melted
- 4 cloves garlic, unpeeled, smashed
- sea salt and freshly ground black pepper, for sprinkling
- fresh thyme or rosemary sprigs, for garnish
Score the potatoes in a spiral motion all the way around the body. Toss with duck fat and garlic on a dark oven tray. Season and roast at 200°C for 30 minutes, shaking the tray occasionally, until golden brown and tender. Serve garnished with thyme sprigs.
