Fattoush Salad

A meal in itself, this vibrant Egyptian salad with crunchy pita pieces and a touch of spice is the perfect accompaniment to lamb.

Preparation Time: 15 minutes
Ingredients
  • 2 pita bread or 1 pide bread, torn or cut into small pieces
  • extra virgin olive oil
  • sea salt, to taste
  • allspice, to taste
  • 1 lebanese cucumber
  • 1 small cos lettuce, shredded
  • 4 large tomatoes, diced
  • 4 radishes, finely sliced
  • 2 spring onions, chopped
  • 1 small red capsicum, cut into strips
  • 1/2 bunch continental parsley leaves
  • 1/2 bunch mint leaves
  • juice of 1 lemon
  • sumac or dukkah, for sprinkling
Method

Toss bread pieces with olive oil on an oven tray and season with salt and allspice. Bake at 200°C for 10-15 minutes until golden brown. Cut cucumber in half lengthwise, scoop out seeds and cut into slices. Layer lettuce, cucumber, tomatoes, radishes, spring onions, capsicum, parsley and mint leaves onto a large platter. Shake lemon juice and 1/2 cup olive oil together in a jar and dress salad, seasoning with salt and tossing lightly. Stir in toasted bread just before serving and sprinkle liberally with sumac.
