Fennel Chicken, Cauliflower and Feta Tray Bake

Juicy spiced chicken baked with cauliflower and crumbled feta makes an easy dinner.

Cooking time: 1 hour
  • 1 kg thigh fillets
  • 1 teaspoon fennel seeds
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon chilli flakes
  • 1 teaspoon salt
  • extra virgin olive oil
  • 3 teaspoons smoked paprika
  • 1 cauliflower, cut into florets
  • 1 red capsicum, sliced
  • 1 red onion, cut into wedges
  • 4 cloves garlic, smashed
  • 1 punnet cherry tomatoes
  • 200g feta
  • continental parsley, for garnish

Combine chicken with fennel, coriander, chilli, salt, 1/4 cup oil and 2 teaspoons paprika and place in a large roasting tray. Arrange cauliflower, capsicum, onion, garlic and tomatoes around the chicken. Drizzle with oil and sprinkle with remaining paprika. Roast at 200°C for 45 minutes-1 hour until chicken is golden brown. Break feta into pieces and sprinkle on top. Roast for a further 5 minutes. Serve sprinkled with parsley.
