Feta Spaghetti

A quick as a flash pasta dish that uses marinated feta, oil and all, for flavour and creaminess.

Serves: 4
Preparation Time: 5 minutes
Cooking time: 20 minutes
  • 500g spaghetti
  • 350g marinated feta in oil
  • 4 cloves garlic, crushed
  • 1 punnet cherry tomatoes
  • 1 bunch basil leaves
  • sea salt and freshly ground black pepper, to taste

Boil spaghetti in a pot of salted water until al dente, drain, reserving 2 cups of pasta water. Heat the oil from the marinated feta in the pot and sauté garlic and tomatoes for 5 minutes, until tomatoes burst. Add feta, pasta water and spaghetti and cook, tossing for 5 minutes until a creamy sauce is formed. Stir in basil leaves, reserving some for garnish, and season to taste. Serve sprinkled with pepper and garnished with basil.
