Easy Greek salad flavours on bruschetta for a snack or pass arounds.

- 2 ripe tomatoes, finely diced
- 1 lebanese cucumber, finely diced
- 1 spring onion, chopped
- 1/3 cup small basil, dill or parsley leaves
- extra virgin olive oil
- sea salt and freshly ground black pepper, to taste
- 1 frenchstick
- 100g fetta, crumbled
Combine tomatoes, cucumber, spring onion and basil with 1/3 cup olive oil and season to taste. To make bruschetta, cut frenchstick diagonally into long slices. Brush on both sides with olive oil and season with salt. Grill until toasted on both sides. Spoon tomato mixture over each bruschetta and top with fetta . Drizzle with olive oil and sprinkle with pepper.
