Fig and Almond Friands

Little cakes with fig yoghurt and almonds.

Makes: 24
Preparation Time: 15 minutes
Cooking time: 20 minutes
Ingredients
  • 2 cups self raising flour
  • 2 cups almond meal
  • 1 cup caster sugar
  • 600g fig yoghurt
  • 4 eggs
  • 1/2 cup flaked almonds, for sprinkling
  • melted butter, for brushing
Method

Combine flour, almond meal, sugar, yoghurt and eggs together. Spoon into 24 buttered friand or mini muffin pans and sprinkle with flaked almonds. Bake at 180°C for 15-20 minutes until golden brown. Turn out onto a wire rack to cool. Brush with melted butter.
