Fig Semolina Flan

A quick mix tart-like flan that is great with figs, plums, cherries, peaches or apricots. Delicious served warm fresh from the oven.

Serves: 8
Preparation Time: 10 minutes
Cooking time: 30 minutes
  • 1 cup icing sugar
  • 1/2 cup plain flour
  • 1 1/2 cups fine semolina
  • 3 eggs, lightly beaten
  • 180g butter, melted
  • 8-10 fresh figs, cut in half
  • raw sugar, for sprinkling
  • 1 tablespoon toasted slivered almonds, for sprinkling
  • double cream, for serving

Mix together icing sugar, flour and semolina together in a bowl. Make a well in the centre, mix in eggs and butter. Pour into a buttered 30cm flan tin with removable base. Arrange figs, cut side up, on top and sprinkle with sugar. Bake at 200°C in the upper half of the oven for 30 minutes until golden brown. Remove from flan tin onto a serving plate, sprinkle with almonds and serve warm with cream.
