Goat’s Cheese Prosciutto Figs with Balsamic Glaze

Serve these figs at the height of their season for brunch or as starters.

Preparation Time: 15 minutes
Cooking time: 15 minutes
  • 120g goat’s cheese
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 8 large ripe fresh figs
  • 8 thin slices prosciutto
  • freshly ground black pepper, to taste

Cut cheese into 8 slices. Combine vinegar and brown sugar in a saucepan and heat, stirring until the sugar has dissolved, then boil until syrupy and reduced by 1/3. Make a deep cut into the centre of each fig, insert a slice of cheese and place on an oven tray, shaping the fig back together. Bake at 200°C for 10 minutes until warmed through. Quickly wrap each fig in prosciutto and place onto serving plates. Drizzle with balsamic glaze, sprinkle with pepper and serve immediately.
