Greek Zucchini Fritters
Tasty zucchini and feta fritters that work for breakfast, entree, mezze or a snack. This recipe makes 6 fritters but can be easily doubled. Serve with Tzatziki.

Ingredients
- 250g zucchini
- 1 teaspoon sea salt
- 50g feta cheese, crumbled
- 1 spring onion, chopped
- 1 tablespoon chopped mint
- 1/3 cup flour
- 1 egg
- freshly ground black pepper, to taste
- extra light olive oil, for frying
Method
Grate the zucchini and place in a sieve over a bowl. Sprinkle with salt and squeeze with your hand to extract some of the liquid. Mix with feta, spring onion, mint, flour and egg and season with pepper. Shallow fry large tablespoonsful of mixture in hot oil in a frypan until golden on both sides. Drain on absorbent paper.
