Green Beans with Anchovies and Cherry Tomatoes

The addition of salty anchovies and the fresh burst of cherry tomatoes makes the most of green beans.

Serves: 4
Preparation Time: 10 minutes
Cooking time: 10 minutes
  • 45g can anchovies in oil
  • 2 cloves garlic, crushed
  • 400g green beans, trimmed
  • 1 punnet cherry tomatoes
  • 1/4 cup water
  • extra virgin olive oil, for drizzling
  • freshly ground black pepper, for sprinkling

Drain the oil from the anchovies into a large frypan, heat and sauté the garlic until softened. Reserve 1 anchovy for garnish, add the rest to the pan with the beans, tomatoes and water and cook, shaking occasionally, for 5 minutes until beans are tender. Place in a serving bowl, garnish with anchovy, drizzle with oil and season with pepper.
