|Preparation Time:||15 minutes|
|Cooking time:||15 minutes|
- 2 cups cracked freekah*
- 2 cups frozen peas
- 2 spring onions, chopped
- 1 bunch mint
- 1/4 cup chopped pistachios or toasted almonds
- 350g South Cape Marinated Fetta
- juice of 1 lime or lemon
Place freekah, 1 litre water and 1 tablespoon salt in a saucepan, bring to the boil and boil for 15 minutes until tender. Add peas and simmer 2 minutes. Drain, rinsing briefly, and cool. Reserve some mint leaves for garnish, chop the rest and mix into the freekah with the spring onions. Gently stir in the South Cape Marinated Fetta, together with its oil, and lime juice. Serve garnished with pistachios and mint.
* Freekah is an ancient grain made from roasted green wheat. Farro or brown rice can be substituted, adding a little longer cooking time if needed.
