Hand Cut Double Fried Chips
Learn how to make crispy, addictive home made chips!

- 4 large potatoes (Royal Blue)
- sea salt, to taste
- extra light olive oil, for deep frying
Peel potatoes, cut into fat chips and sprinkle with salt. Deep fry in hot oil over medium heat until potatoes are tender but not coloured. Remove with a slotted spoon and drain on absorbent paper. Allow to cool. Deep fry for a second time in very hot oil until golden brown. Drain on absorbent paper and serve immediately, sprinkled with salt.
Chips can be kept in the fridge for up to 24 hours after the first fry and then deep fried again just prior to serving.
