Honeyed Almond Dukkah Rack of Lamb

Simple, sweet and spiced, this lamb dish is a winner.

Serves: 4
Preparation Time: 15 minutes
Cooking time: 25 minutes
Ingredients
  • 8 chop rack of lamb, trimmed
  • extra virgin olive oil, for drizzling
  • honey, for drizzling
  • freshly ground black pepper, to taste
  • ALMOND DUKKAH
  • 2 tablespoons flaked almonds
  • 1 tablespoon sesame seeds
  • 1 tablespoons ground cumin
  • 1 teaspoon salt
Method

Place lamb in a roasting dish and drizzle all over with olive oil and season with salt. Coat with Almond Dukkah and roast at 200°C for 20-25 minutes until done to your liking. Allow to rest for 10 minutes. Drizzle with honey, sprinkle with pepper and carve at the table.

ALMOND DUKKAH
Combine almonds and sesame seeds in a frypan and cook, stirring for a few minutes until lightly toasted. Turn off heat, mix in cumin and salt and allow to cool. Crush in a mortar and pestle or place in a bag and batten with a rolling pin to make a crumb. Use as required.
