An Italian classic, and this version does have a little cream added!

- 500g linguine
- 50g butter
- 1 onion, finey diced
- 200g pancetta or streaky bacon, diced
- 3 eggs
- 1 cup cream
- 125g grated parmesan
- sea salt and freshly ground black pepper, to taste
Cook linguine in a large pot of boiling salted water until al dente. Meanwhile, heat oil in a frypan and sauté onion and pancetta until golden. Combine half the parmesan with the eggs and cream and lightly beat with a fork. When cooked, drain pasta, reserving 1 cup of cooking liquid. Quickly toss hot pasta with onion, bacon and egg mixture, stirring until just set and adding a little cooking liquid if needed. Season, spoon into bowls and serve sprinkled with pepper and remaining parmesan.
