Oysters Americano with Campari, Vermouth and Bacon

Plump fresh oysters with a dressing inspired by the Americano cocktail are a sophisticated starter.

Makes: 2 dozen
Preparation Time: 15 minutes
  • 2 slices smoked streaky bacon, diced
  • 2 dozen oysters
  • 1 tablespoon Campari
  • 1 tablespoon red Vermouth
  • 1 tablespoon fresh orange juice

Dry fry bacon in a non-stick pan on medium heat for 10 minutes until fat is rendered and bacon is crisp. Drain on absorbent paper. Shake all ingredients for dressing together in a jar. Serve oysters with a drizzle of dressing and sprinkle of bacon.
