Peanut Butter Banana Muffins – Gluten Free
These muffins have a lot going for them…they are easy to make, flour and gluten free and a great way to use up those over-ripe bananas!

- 500g crunchy peanut butter
- 4 over-ripe bananas
- 4 eggs
- 1 teaspoon bicarbonate of soda
- 1 teaspoon vanilla essence
- 1 tablespoon icing sugar
- peanuts, for garnish
Line 12 muffin pans with paper liners. Combine 1 /2 cups peanut butter, bananas, eggs, bicarbonate of soda and vanilla essence in a food processor and blend until smooth. Spoon mixture into muffin pans and bake at 200°C for 20-25 minutes until golden brown. Allow to cool on a wire rack. Combine remaining peanut butter with icing sugar and use to spread on muffins. Garnish with peanuts.
